Wheats with wedge shells
Migas com conquilhas is a special dish made of breadwheat, and seafood.
In Portugal there are very dishes similar to this, made of wheats.
Try this one! It is a very traditional dish from Algarve.
- 1kg wedge shell
- 1dl olive oil
- 2 onions
- 4 fresh and full-blown tomatoes
- 2 garlic cloves
- 3 eggs
- 1/2 artisan bread
- 1 bunch coriander
- salt and peppercorn to taste
Wash the wedge shells in cold water. Put them in a recipient and cover them with sea water for 4 or 5 hours. If you don't have sea water, use fresh water with a lot of salt.
Wash the wedge shells again in cold water and put them in a pan. Cover them in water and take it to the stove, and keep them in the fire until they open. After you did so, drain the water out of them. But keep the water, making sure it doesn't have any sand. Take the wedge from its shell.
In a pan, join the olive oil, the garlic and the shred onion. Take it to the stove and let it braise slowly. Meanwhile, take off the stalk and peel the tomatoes. Cut them in small cubes. When the braise is almost done, add the tomato, and let it get the right taste. Mix it with a wooden spoon. Add the water from boiling he wedge shells and add the wedge shells you took out of the shell. Season it with salt and pepper to taste and let it boil.
In a bowl, beat the eggs and add the soup you made. Sprinkle with coriander and let it cook.
Put the bread in slices and share it in plates. In the bread put the all you made and serve imediately.
