Rich Wheats

Rich Wheats means in portuguese Papas Ricas. Its a dish made for breadsoup and wheat lovers.

Because it's a dish from Algarve, it is made with olive oil, and of course, seafood.



Ingredients:

  • 200g wheat flour
  • 2 onions
  • 3 full-blown tomato
  • 1,5dl olive oil
  • 1 chorizo
  • 150g salty ham
  • 300g shrimp without the shell
  • 0,5kg wedge shell
  • 0,5 dl white wine
  • 2 garlic cloves
  • 1 bunch of coriander
  • salt and peppercorn to taste



Preparation:

Shred the onion. take off the stalk and peel the tomato and take its seedings. Cut in cubs. Put a pan in the stove with olive oil and let it hit a bit. Then, add the onion and let it braise.
Join the tomato, the chorizo and the ham, shred, and add them to the braise. Mix it once in a while and let it in the

stove untill it gets a golden color.
Put on some wine, let it absorve some of it, and then take it from the stove.
Add the wheat flour softly so it doesn't create nodes. take it to the stove again, to cook the the flour. if necessary, add a little water so it will be less consistent.
When the wheats are done, add the shrimp, and let it cook. Boil the wedge shells with the rest of the onion, the garlic and the bunch of coriander. Serve the wheats hot with the wedge shells.
