Salada de Polvo means octopus salad.
It is a fresh Algarvian dish, where the cuisine can take advantage of the wonderful sea ahead.
See how you can do it by yourself:
- 1,5kg octopus
- 2 onions
- 1 bay leaf
- 1 red bell pepper
- 1 big can of green beans
- 1dl olive oil
- 1 tablespoon vinegar
- 1 bunch of parsley
- 1dl white wine
- salt and peppercorn to taste
Boil the octopus in a pressure cooker, for about 30minutes in water seasoned with salt, a onion and the bay leaf.
Roast the bell pepper. After it's roasted, peel it, and chop it in slices. Add it the other onion in half-moon shape, and the octopus in small pieces.
Mixture the green bean, washed and drained. Season it with salt and pepeercorn to taste.
Finish it by sprinkling it with some olive oil and vinegar. Mixture it very well.
Serve with some parsley for decoration.
