This is the recipe for a traditional fish soup in Algarve.
For those who love soup and seafood, this is a great recipe.
That is how it's done:
- 250g Monkfish
- 250g wels
- 500g squid
- 250g shrimp
- 2 onions
- 2 garlic cloves
- 1 big carrot
- A bunch of parsley
- A bunch of coriander
- 1 bay leaf
- 300g tomatoes
- 2,5dl oliver oil
- 1,5dl white wine
- 3 liter fish water*
- 1 glass of old brandy
- 25g sparguetti
- 250g conquilha without shell
- salt and peppercorn to taste.
*the fish water, is the water in wich you boiled the fish, prepared with a carrot, a leek, a onion and two bay leaves. The water should be twmpered with salt and peppercorn.
Wash and prepare the monkfish, the wels, and the squid. Chop into pieces the monkfish and the wels. And into slices the squid. Season with sald and peppercorn. Peel the shrimp. Peel, wash and cut the carrot into cubs. Wash the parsley, the bay leaf and the coriander. Wash the tomato, taking all the seeding. Shreed the tomato. Fry the onion, the garlic and the carrot, until it has a golden color, in 1,5dl olive oil, join the coriander and the parsley to taste. Add the tomato, and the wine. Let it braise.
Add the fish water and let it boil. Stir-Fry the monkfish, the wels, the squid, and the shrimp in the oliver oil left. Add the old brandy, and let it flame. Join the sparguetti, previously cut, the fish and the flamed seafood to the soup you made, take the erbs off, and let it boil.
Add the conquilha, and season to taste.
Put it all in a tureen, put some coriander on it, and serve it hot.
