This recipe is the Algarve way of doing an almond pie, wich in portuguese it's called "Tarte de Amêndoa".
This recipe has 2 processes: One for the crust pie; the second for the filling.
The Crust pastry:
- 200g flour
- 1 tablespoon olive oil and vinegar
- a pinch of salt
- cold water
Put the flour in a bowl. Add the olive oil, the vinegar and the pinch of salt. Mix it all up and start adding water until it gets easier to shape. Make a ball and let it rest, covered, for about 15 minutes.
Then, unroll the pastry in a surface with some flour on it, until it gets very thin. Line the cake pans with the pastry.
If you prefer you can buy pre-baked pastry, to haste things. Although it may be better and tastier if you do it yourself.
- 300g sugar
- 5 eggs
- 180g almond meal
- 30g coconut
- 1,5dl water
- powdered sugar
Put the sugar and the water in a pot and take it to heat in the stove. Let it boil until it reaches a point when the mixture makes a thick pasty string. Join the egg yolk and the eggs together and join them to the cream you did previously. Mix it all together energetically.
The, add the almond meal and the coconut.
Line small cake pans with the pastry. Put the cream you made in them. Powder it with powdered sugar and take it to the oven. Cooked it slowly.
Serve after it's cold. Powder it with a little more powdered sugar.
